Creamy Coconut Simmering Sauce

This isn’t just a sauce—it’s a memory. Chef Tushar grew up watching his mother hand-grind spices and squeeze fresh coconut milk from coconuts plucked right from their backyard. Creamy Coconut Aamti is an heirloom recipe that reflects the heart of Maharashtrian coastal cooking. Slow-simmered, soulful, and deeply comforting. What Does It Taste Like? Velvety coconut milk meets warm spices and a subtle tang from kokum. The flavour is gentle but layered—rich with turmeric, mellowed with garlic, and finished with the signature sour bite of kokum. It’s earthy, creamy, and completely satisfying. Why It’s Special We’ve recreated this traditional recipe with the same care and love Chef Tushar’s mum did. This aamti is balanced and light, yet packed with deep coastal flavour. It’s delicate enough to enjoy on its own, yet versatile enough to complement your favourite protein or vegetables. What’s Inside? Coconut Milk – The creamy, comforting base Onions & Tomatoes – For sweetness and body Chilli Peppers, Ginger & Garlic – To add depth and warmth Curry Leaves – For that unmistakable South Indian aroma Cumin, Coriander & Turmeric – The core of Indian spice magic Kokum – A souring agent that adds brightness and colour How to Enjoy It Pour it over steamed rice, dunk a soft neer dosa into it, or enjoy it as a warm, comforting soup. Simmer it with shrimp, white fish, or hearty vegetables like pumpkin or okra. This sauce brings a little bit of Maharashtra to your table—rain or shine.
