Kerala Black Pepper (Kali Mirch) – Bold Whole Peppercorns from Idukki

We grow black pepper on our farm in Rajakumari, in Kerala's Idukki district, where the vines climb the same shade trees that shelter our cardamom. When our own harvest isn't enough, we buy pepper from other growers in Idukki and hold it to the same standard. Every batch is dipped in hot water, sun-dried, cleaned and graded, so only bold, heavy corns go into the pouch. The spikes are picked and the green berries are separated from the stalks. Dipped in hot water. The berries go into hot water briefly before drying. This is the method Kerala Agricultural University recommends: it cleans the berries, helps them turn an even black, and shortens drying time. Sun-dried. The berries dry in the sun until they are dark, wrinkled and hard. Cleaned. Stones, stalks and dust are removed. Graded. Light, hollow and small berries are taken out, leaving only bold, heavy corns.
